THE RISE AND RISE OF BREAD

Dating from Neolithic times, bread-making is one of the oldest crafts. Simple breads are still made from various grains all round the world and are more and more popular in Western societies – suddenly we have all heard of Mexican tortillas, Indian chapatti and naan and Middle Eastern pitta.

In recent years, the ancient craft of bread-making has gained hugely in popularity with many “artisan” bakers setting up in business. The time-tested traditional craft of bread-making results in every loaf boasting its own distinctive look and taste. In common with many of today’s cooking trends, the emphasis nowadays is on the use of locally-sourced and highly nutritious natural ingredients with wholemeal grains and seeds adding to the flavour and appearance of the loaf. The decorative markings on the top of many loaves originated from the days when villagers baked their loaves in a communal oven and identified their loaf with a family mark or emblem.
