Walter Purkis prides itself on the fact that nearly all of its products are caught wild.

Both London shops have day supplies coming in from Billingsgate Market, Cornwall, Devon, Grimsby, Aberdeen, Fraserburgh and many other fishing ports around Britain. There is also a twice weekly delivery from Europe with some of the more exotic fish and shellfish.

Much of its smoked fish comes from a century-old smokehouse at the rear of one of the shops.
